This barrel aged white balsamic vinegar from Modena, Italy, is made from acetified grape must matured using the Solera method of blending and transferring the vinegar in high-quality barrels of different sizes. 

 

Several years of aging result in a dense, smooth, and sweet light-amber balsamic. It has a lovely, fragrant aroma that is perfect for summer foods.

 

This is an enjoyable balsamic to use on its own. It also blends well with a milder EVOO such as Koroneiki, Mission, Arbequina or House Blend.
