1 lb. beef stew meat
1 lb. ground beef
1 med/large onion chopped
Oleaceae Jalapeno or Santa Fe Blend olive oil
Oleaceae Fresh Garlic olive oil
Oleaceae Barrel Aged Red Wine Vinegar
Brown beef with some chopped onion in a large stew pot with Oleaceae olive oil, such as jalapeno or ancho chile and/or garlic olive oils. Add salt and black pepper.
Deglaze pot with a splash or Oleaceae Italian Red Wine vinegar
Add red chili powder and seasonings--such as Mexican oregano (this can be as little as a couple of tablespoons or 1/3 cup which we like to do)
Add a small can or tomato sauce or canned, diced tomatoes
Add a little cayenne pepper if you like extra heat.
Add water to cover.
Simmer for at least an hour, adding water if needed.
Add cooked pinto beans--a cup or two.
Add a splash of catsup.
Serve with corn tortillas or tortilla chips.
