Sherry Wine Vinegar is made from sherry wine, which means it can only be produced in one place: Southern Spain.
The Palomino grape gives the vinegar a light and tangy taste. Moscatel and Pedro Ximenez are sweeter grapes that balance the sweet and acidic taste, making the vinegar rich in flavor.
The vinegar is kept and fermented in oak barrels for 6 months and up to 10 years. The longer it is stored, the more concentrated it becomes. It has an incredibly smooth and complex flavor with a 7% acidity.
This vinegar is a must in any kitchen for deglazing pans when searing chicken and meats. It is perfect in marinades, vinaigrettes and for drizzling over fresh vegetables, soups and chowders.
