I Love Autumn

Finally, it is October and those of you who live in the hot and humid areas of the country know exactly how I feel. Anticipation of cooler days and nights and the enjoyment of being outside again after a long hot summer. Just a couple of days of temperatures lower than 85 and my mind is racing for all the wonderful comfort foods I love to make (and eat!!)

In talking with my brother-in-law who lives in Ohio this morning I realized that it really does not matter what climate you live in the country the arrival of Autumn and coming of Winter turns thoughts to a different desire for food. He was lamenting the fact that it was getting colder and Winter was right around the corner while I was rejoicing in it.

But as soon as I started talking about some of the things I was looking forward to cooking and what oils I would be using we realized we both had something to look forward to.

One of the dishes I love to make at this time of year as it is a wonderful opportunity to use the abundance of tomatoes available is Baked Tomatoes with Fresh Herbs.

I particularly like serving it with Easy in the Pan Macaroni and Cheese but it is also wonderful with steaks, chicken, sausages and eggs.
