This cask-aged balsamic vinegar from Modena, Italy measures 1.28 in density and is made from select Trebbiano and Lambrusco grapes. Using age-old Italian production methods, high percentage Grape Must (cooked and concentrated) and aged vinegar undergo a slow and long maturation process in oak barrels. The final product is a dense, sweet and sour taste with a fruity bouquet.
It is a classic balsamic taste with port and madeira undertones.
A little goes a long way. Use on Caprese, avocados, hard cheese. Perfect as a glaze for meats, game and poultry.
